Tramp’s Brew

Here is my recipe for home brewed beer.

I promised to post it for Southern Girl.

This is a Czechoslovakian Pilsner, a strong, crisp, clean tasting brew that comes out at 6% alcohol. The method I use follows the German hop schedule, which allows for separate, distinct hop tastes and smells.

Ingredients
4 lbs. Alexanders Pale Malt Extract (barley), unhopped
2 lbs light dry malt
3 ozs Saaz hops
A quality liquid yeast such as Wyeast
½ oz Pilsner enzyme


Method
Sterilize everything except yourself. The spouse might want another child.
Boil 2 gallons of water.
Add malt extract (barley), malt and 1 oz hops.
After 20 minutes add another 1 oz hops.
At 40 minutes add last 1 oz hops (the finishing hops).
Stop brewing at 60 minutes.
Add this wort to 3-4 gallons of water in sterilized fermentation vessel, depending on desired strength of beer (I use 4).
Allow to cool.
Pitch (add) yeast and pilsner enzyme.
Ferment for 3 weeks in a sealed fermentation vessel with an airlock.
Siphon to sterilized glass carboy.
Seal with an airlock and secondary ferment for 10 days.
Siphon to sterilized bottling vessel. (A bucket with a tap works great.)
Add 8 oz corn sugar to 1½ cups boiling water.
Allow to cool.
Add to brew, stir and bottle with oxygen absorbing caps.
Bottle condition at least 10 days.
Enjoy responsibly (don't spill it on yourself).
