Anyone like KFC? Or Popeye's?


I like KFC chicken. But they won't give me the recipe.
Something about it being a secret.

Secret my ass!
Not so long as I can hack!
I take that as a challenge.
Also, a reader requested it.

I'm just asking for trouble, aren't I?

That's fine with me. Anything for my readers!

KFC 11 Secret Herbs And Spices
INGREDIENTS:
1 tablespoon rosemary
1 tablespoon oregano leaves
1 tablespoon ground sage
1 teaspoon ground ginger
1 teaspoon dry marjoram
1 1/2 teaspoons thyme
3 tablespoons brown sugar, packed
2 tablespoons dry parsley flakes
1 teaspoon pepper
1 tablespoon paprika
2 tablespoons garlic salt
2 tablespoons onion salt
2 tablespoons chicken bouillon granules
1 envelope (1 cup serving size) tomato cup of soup mix flour, as needed
PREPARATION:
Place all ingredients in blender and pulse until ground, or rub through a fine strainer. Store in an airtight container Makes about 3/4 cup.
Add 2 tablespoons of seasoning mixture to a cup of flour for coating chicken.

Popeye's Fried Chicken
INGREDIENTS:
6 C vegetable oil or olive oil
2/3 C all-purpose flour
1 T. salt
2 T. white pepper
1 tsp. cayenne pepper
2 tsp. paprika
3 eggs
1 frying chicken with skin, cut-up
PREPARATION:
Heat oil over medium heat in a deep fryer or in a deep cast-iron skillet on the stove.
Combine the flour, salt, peppers, and paprika in a bowl.
In another bowl, break eggs and beat until well-blended.
Check temperature of oil by dropping a pinch of flour mixture in pan. If the oil bubbles rapidly around the flour, it will be the right temperature.
Dip each piece of chicken into eggs; then coat generously with the flour mixture. Drop each piece into the hot oil and fry for 15 to 25 minutes or until the chicken is a dark golden brown.
Drain chicken on paper towels and serve warm.

Makes 8 pieces.

NOTE: You really need to use the white pepper to get the right taste to this chicken recipe.

Pizza Hut cavatini pasta recipe.
INGREDIENTS
:
4 cups cooked pasta, combination of wagon wheels and corkscrew
2 pounds ground round
1 to 2 tablespoons olive oil
1 1/2 packages dry onion soup mix
2 cans (14.5 ounces each) stewed tomatoes, cut up
6 ounces V-8 vegetable juice
16 ounces purchased spaghetti sauce, meat flavored
1/3 cup grape jelly
Mozzarella cheese slices
Provolone cheese slices

PREPARATION:
In a large skillet over medium heat, brown the ground round in oil, breaking up, until no longer pink. Reduce heat to low. Add soup mix, tomatoes, V-8, spaghetti sauce, and grape jelly. Stir to blend ingredients.
Continue to cook over low heat, uncovered, for about 15 minutes. Do not boil. In individual au gratin dishes, alternate layers of cooked pasta, the sauce and slices of mozzarella provolone cheese. Bake at 350° for 15 minutes, until hot and cheese is melted. If desired, top each serving with a slice of cheese about 5 minutes before done.

Serves 6.
